Some things in life are always better when they are simple…. just like Aglio e Olio! Not overly laden with any creamy sauce or tomato based sauce…. nor with any rich cheese either…… just plain simple pasta tossed in garlic, chilies and olive oil and its Simplicity at its best! And when enjoyed with an even simpler warm salad…… its Simplicity at its bestest!!
Aglio e olio
You will need:
- A cup pf pasta of your choice
- 1/2 tsp chili garlic
- 1-2 tsp olive oil
- salt
How you do it:
Cook the pasta in boiling water with salt and olive oil till al dante……. drain and run cold water through it.
Heat olive oil and sizzle chili garlic till the smell wafts in your kitchen!
Toss in the cooked pasta, garnish with some dried herbs and serve!
Warm salad
Warm salad pairs wonderfully with this pasta. Light, yet filling and you are off to a healthy meal!
You will need:
- Mushrooms, baby corn, asparagus about a cup together
- 1/4 tsp chili garlic
- Extra virgin olive oil
- salt
how you do it:
Toss all the ingredients and grill it for 10 min till the veggies are tender.
That’s it!

Same Pinch. I just posted my version of Aglio e Olio yesterday 😀 . It sure is an express dish.
